-Cook 1 lb hot breakfast sausage on medium/high heat into nicely browned crumbles.
-Remove sausage from the pan with a slotted spoon and reserve those yummy drippings to make the gravy.
-Reduce to medium heat and stir in 3 tbsp butter until melted
-Add ¼ cup flour and whisk until smooth
-Let mixture cook until light brown, and then slowly whisk in 3 cups whole milk.
-Stir until thick and well combined.
-Add salt and pepper to taste.
-Stir sausage crumbles back into gravy.
