- This recipe makes 2 servings
½ pound ground sausage (I used Italian seasoned pork sausage, but any ground sausage will do just fine)
2 tbsp. Vegetable oil
2 tbsp. Onion - diced
½ medium tomato - diced (about ¼ cup)
2 tbsp. Cilantro
1 cup refried beans
3 cups tortilla chips
1 ½ cups shredded cheese (Colby Jack or Cheddar)
2 tbsp. Sour cream *optional
1 tbsp. Fresh lemon juice *optional
Heat pan on medium high.
Add sausage *no oil is necessary at this point, there is enough fat in the sausage to coat your pan.
Heat beans according to directions. (I just kept them on a low heat until everything else was ready).
Place chips on a plate and top with shredded cheese, set aside.
When sausage is almost done and starting to brown, heat a small pan on medium high heat along with oil.
Crack eggs, one at a time into pan, and cook until the white of the egg is set, about 2 minutes, then flip and cook an additional 30 seconds or until desired doneness is achieved. (I kept mine pretty runny.)
Repeat process with next two eggs.
While waiting for the last egg to cook, microwave the chips and cheese on high for 45 seconds.
Top with beans, sausage, fried eggs, onion, tomato, and cilantro.
Garnish with sour cream, lemon juice, and hot sauce if desired.
