Boil the dried shitake until it becomes soft. Run the boiled shiitake under cold water to keep them firm and then chop them. Cook the chicken with the garlic lightly.
Half-fill a pan with water and add the mushrooms and chicken. Simmer for next 15 minutes.
Add spring onions and peppers. Then cook until they start to become soft and look squashed.
Put in the noodles and fresh oyster mushrooms. put the lid on and then cook for next 10 minutes.
Adjust seasonings as required after tasting.
