Chocolate Orange Pie

1 baked and cooled pie shell
1 small package of instant chocolate pudding mix
1-1 ½ c cold milk (depends on the thickness you want)
1 tsp unflavoured gelatin
¼ cup frozen orange juice concentrate, thawed
1 cup whipping cream
¼ c sugar
½ tsp vanilla
1. Mix pudding mix and milk together until well combined and starts to thicken. Pour into cooled pie shell and refrigerate. In a small saucepan, combine thawed concentrate and gelatin and stir over low heat until gelatin dissolves. Let cool slightly. Whip whipping cream, sugar and vanilla together until soft peaks form. Fold in orange mixture. Once combined, spread evenly over chocolate layer and let refrigerate for at least an hour.
