Cilantro Lime Chicken

Ingredients - This recipe makes 2
Chicken (whatever kind you prefer)
Olive oil (do not exceed half a cup)
1 Whole lime
½ cup chopped cilantro
1 teaspoon pink salt
½ tablespoon crushed peppers
½ tablespoon parsley
1. In a bowl place thawed chicken.
2. Pour olive oil
3. Add your herb mixture as well as cilantro (including chopped stems) You want more stems than leaves
4. Cut lime into many thin slices (circle) then cut in half (wedges)
5. Place half of the lime cut into bowl and reserve half for after chicken is cooked to squeeze onto chicken
6. plastic wrap bowl and let set for 20minutes to an hour
7. Preheat oven to 310 degrees
8. Place on pan and check every 15 minutes.
9. Take out and enjoy! Shred and make tacos or add a side dish.
Tips and Tricks
Shred chicken and place on tortilla, with peppers, rice, beans, tomato and sour cream. Finish it off with a fresh squeeze of lime juice on top.
