Crowd Size Chili Con Carne

Ingredients - This recipe makes 20 - 24 servings
4 pounds ground beef
8 medium onions, chopped (4 cups)
4 cans (12 ounces each) tomatoes
4 cans (15-1 ounces each) kidney beans, drained (save liquid)/
1 can (15 ounce) tomato sauce
2 tablespoons sugar
3 tablespoons chili powder
1 tablespoon salt + 1 ½ teaspoon salt
1. Cook and stir ground beef and onion in Dutch oven or large roasting pan until meat is cooked and onion is tender.
2. Drain off any fat.
3. Stir in tomatoes, reserved kidney bean liquid, the tomato sauce and seasonings. Heat to boiling. Reduce heat & simmer uncovered 1 hour 15 minutes.
4. Stir in the beans. Simmer, stirring occasionally, for about 15 minutes or until of desired consistency.
Tips and Tricks
I like to add 1/4 teaspoon of cayenne pepper for a bit of zing. Also, I like to add mushrooms. You can really add anything you like. You can turn this recipe vegetarian simply by omitting the beef. Add carrots, eggplant, etc.
I also like to add either sour cream to cool a bit of the heat if there is too much spice. Shredded cheddar cheese also adds a different flavor and absorbs a bit of spice.
