Gluten Free Sandwich Bread (Bread Machine)

Ingredients - This recipe makes 1 loaf
1 tablespoon bread machine yeast
1 tablespoon white sugar
12 ounce warm water
11 ounce Gluten Free Flour Mix
2 teaspoon xanthan gum
1 teaspoon salt
3 eggs (or 9 tablespoon water plus 3 tablespoon ground flax seed)
1 ½ tablespoon oil
1 teaspoon cider vinegar
1. -Combine yeast and sugar in a small bowl. Add the warm water while gently stirring the yeast and sugar. Let this mixture sit while you mix up the rest of the ingredients.
2. -Combine flour mix, xanthan gum and salt in your largest mixing bowl. Stir well.
3. -In a third bowl, whisk the eggs, oil and vinegar until eggs are a bit frothy.
4. -Combine the yeast mixture (It should be frothy by now) and the egg mixture liquid into the flour mixture.
5. -Beat with a mixer for about 4 minutes on slow speed.
6. ---Using Bread Machine
7. Place your dough in the bread machine and smooth the top of the dough. Bake using an 80 minute setting. This allows 20 minutes of kneading, 18 minutes of rise, and 42 minutes of baking.
8. ---Using Conventional Oven
9. Place your dough into a greased loaf pan. Allow the dough to rise in a warm area until it is about 1 inch from the top of your bread pan. Bake at 375 degrees F for approx 55 - 60 minutes.
Tips and Tricks
In the bread machine method, If you remove your paddles, it will just rise for 38 minutes, then will bake and you have no paddle holes in the bottom of your bread.
