Hearty Chicken Stew

I am very conscientious about nutrition and what I choose to feed my family. My boys are picky eaters for the most part, they don’t like the same things so at times I end up making two meals to please both. Tonight I made this hearty stew with free range chicken, organic potatoes, yams and kale which they both loved so I got off easy. This recipe is easy with few ingredients (which I’m all about ?? ) and full of goodness. I tried to stay true to my European roots when creating this, however I ma -- house_of_ramona

Ingredients - This recipe makes 6
½ sweet onion
1 red pepper
8 large red potatoes
1 large yam
8 leaves kale (large)
1 handful fresh parsley (chopped)
2 large chicken breasts
4 tbsp grapeseed oil
1 tbsp Vegeta food seasoning
1 tsp peppercorns
1. Heat oil in your pot ( I used my cast-iron Le Creuset-Round French Oven)
2. Add:
3. Onions and sauté until translucent
4. Chicken and cook until tender
5. Red pepper, sauté for 2 min.
6. Potatoes and yams and cover with water
7. When potatoes and yam are soft add the kale, peppercorns and Vegeta (food seasoning)
8. Add parsley and let it simmer for 10 minutes
9. Voilá!!!
10. Your stew is ready to serve
