Oat Fudge Bar

Ingredients - This recipe makes 25
quick oats (2 ¾ cups)
liquid sweetener (½ cup)
peanut butter (⅓ cup)
sweet potato (1 ½ med)
medjool dates (1 ½ cups = ~15)
flour (1 cup)
cocoa powder (⅓ cup)
maple syrup or agave nectar (3 tbsp)
salt (a pinch)
1. Preheat oven to 350°.
2. Combine liquid sweetener and peanut butter.
3. Stir in oats until it forms a crumbly dough.
4. Press dough into 8x8 baking dish, lined with parchment paper.
5. Bake for 10 mins.
6. Chop and boil sweet potatoes until soft.
7. Blend sweet potatoes, dates and liquid sweetener until smooth.
8. Add flour, cocoa powder and salt. Blend until smooth. OR Pour wet ingredients into a bowl and stir in flour, cocoa powder and salt.
9. Pour batter into pan and bake for 25 mins.
10. Remove from oven and cool for 10 mins.
