Shrimp Fra Diavolo

Ingredients - This recipe makes 4
12 oz Penne pasta (or anything you want)
1 T olive oil
1 T butter
4-5 cloves garlic, minced
¾-1 pound shrimp (peeled and cleaned)
1 15 oz can diced tomatoes
Salt and pepper to taste
½ tsp crush red pepper flakes or to taste
Chopped parsley
1. Bring a pot of water to a boil and cook pasta according to package directions. While the pasta is cooking, add olive oil and butter to a skillet and heat over medium. Once the butter is melted, add the shrimp and cook for about 2-3 minutes on the first side. Flip to the other side and add garlic. Cook for another 2-3 minutes, until pink and opaque. Remove shrimp from the skillet. Add the whole can of tomatoes (juice and all) to the skillet and season with salt, pepper, and red pepper flakes. Keep the heat at medium and cook for about 5 minutes. Once the sauce is a little bit thickened, add the cooked and drained pasta to the sauce. Toss to combine and add the shrimp. Serve with chopped parsley if desired.
