Ingredients - This recipe makes 6
1 ½ lb chicken breast
Salt and pepper to taste
Olive oil
24 oz pasta
¼ c drained and chopped sun-dried tomatoes
3-4 cloves garlic, minced
1 ½ c half and half
¼-½ c smoked gouda
¼ tsp crushed red pepper flakes
1. Cut chicken into bite size pieces and season well with salt and pepper. Heat 1-2 T olive oil up in a deep frying pan over medium high heat. When oil is hot but not smoking, add chicken to brown. While chicken is cooking, bring a pot of water to boil for pasta. Add pasta to water and cook according to box directions. Add sun dried tomatoes to chicken. Cook together for a couple of minutes and add garlic. Cook for about 30 seconds and add in half and half. Let it come to a small boil and season with salt and pepper to taste. Start adding Gouda. We started with about ¼ c but it wasn't quite enough for the flavour we wanted so we ended up adding about ½ c. To finish it off, we added ¼ tsp crushed red pepper flakes. Let it reduce slightly to the thickness you want. Toss the sauce with the cooked and drained pasta. Top with some additional smoked Gouda if desired.
