Ingredients - This recipe makes 2 Servings
1 cup cauliflower rice
½ pound ground turkey
3 cloves garlic, minced
1 small onion, minced
¼ cup hoisin sauce
2 tablespoons Tamari
1 tablespoon rice wine vinegar
1 tablespoon ginger
2-3 teaspoons Sriracha
1 cup shredded carrots
Kosher salt
Freshly ground black pepper
1 head butter lettuce
1. Place a medium saucepan over medium high heat and coat with cooking spray. Add ground turkey and cook until browned, about 3-5 minutes, making sure to break it up into small bits as it cooks.
2. Push the meat to the edge of the pan and stir in ginger, garlic and onion and cook until onions have become translucent, about 3-5 minutes.
3. Add the hoisin sauce, Tamari, rice wine vinegar, and Sriracha to the sauce pan. Stir in to combine well.
4. Add the carrots and cook until tender, about 1-2 minutes.
5. While the turkey mixture is cooking, place a medium saucepan over medium high heat and coat with cooking spray. Add cauliflower rice and cook until toasted, about 5-7 minutes.
6. Add cauliflower rice to the turkey saucepan and stir to combine well; season with salt and pepper, to taste.
7. Serve with lettuce wraps and lime wedges.
