Preparation Time Cook Time
2 oz softened Neufchatel
1-2 T jam--I used black cherry, blood orange, raspberry jam, but any would be delicious!
3 eggs
3-4 T half and half
1 T brown sugar
Pinch of salt
2 tsp vanilla
½ T cinnamon
2 to 4 1 ½" thick slices of French bread or similar
1. Whip together softened Neufchatel and jam in a small bowl. Set aside. Take bread slices and cut a slit in the bread, on the crust side, almost all the way through. Make sure to cut the slit in the middle, leaving the outside edges in tact. Use a spoon to gently spoon the filling into the bread. Be careful not to fill too full. Dunk the stuffed French Toast into the custard and cook over medium-medium high heat to your liking.
