Sweet Green Relish

I wanted to make some sweet green relish and found this recipe in my cookbook by Marie Nightingale called - Cooking with Friends. It is called - Linda Ritchies Champion Million Dollar Relish. She won an award for the best cucumber relish in Canada in 1985 using this recipe. -- JoJo

Ingredients - This recipe makes 10-13
6 pounds cucumbers. (approx 8 large) De-seeded but not peeled.
2 pounds onions
2 red peppers
1 green pepper
8 cups hot water
½ cup salt
4 cups white vinegar
6 cups granulated sugar
1 tablespoon turmeric
2 tablespoons mustard seed
1 tablespoon celery seed
3 heaping tablespoons cornstarch
1. Put cucumber, onions, red and green peppers through a food chopper and let stand overnight in a brine made of the hot water and salt. In the morning, drain well and add dressing made of vinegar, sugar, turmeric, mustard seed and celery seed.
2. Bring to a boil. Thicken with cornstarch, which has been dissolved in a little cold water. Cook slowly for 20 minutes after cornstarch is added. Pour into hot sterilized jars and seal.
