Turkey And Black Bean Pepper Jack Enchiladas

Ingredients - This recipe makes 7
2 tbsp. Vegetable oil
15 king size corn tortillas
½ onion (I used red) - diced
4 cloves of garlic - diced
1 tomato - diced
1 ½ cup if cilantro - roughly chopped
1 lb. Ground turkey
1 tsp. Onion powder
1 tsp. Garlic powder
½ tsp. Cayenne pepper
½ tsp. Chilli powder
½ tsp. Paprika
¼ tsp. Salt
1 ½ cup cheddar cheese - shredded
1 ½ cup pepper jack cheese - shredded
1 28 oz. Can of enchilada sauce
1 15 oz. Can of black beans - drained and rinsed
2.25 oz. Can of olives - drained and rinsed
½ cup of sliced and pickled jalapeños (optional)
 
Instructions 
1. Heat medium saucepan pan on medium high heat with oil.
 
2. Add onion with a pinch of salt and sauté until beginning to soften, stirring frequently, about 3 minutes.
 
3. Mix salt, garlic powder, onion powder, cayenne peper, chilli powder, and paprika together in a small bowl, set aside.
 
4. Add ground turkey to onion, and cook until beginning to brown, about 8 minutes, stirring frequently, and using your spoon or spatula to mash the turkey into small pieces.
 
5. Add garlic and seasoning, cook 2 minutes.
 
6. Reduce heat to low, and fold in black beans, cook additional 2 minutes, set aside.
 
7. Preheat oven to 350°
 
8. Add a very thin layer of enchilada sauce in a 13x9 baking dish, and an 8x8 ½ baking dish, set aside.
 
9. Add about a cup of enchilada sauce into a medium bowl.
 
10. Warm a few tortillas in the microwave at a time, about 15 seconds, just to soften them enough to roll without tearing.
 
11. Dip a softened tortilla into the sauce in the bowl, lay on a plate for assembly, and add about 3 tbsp. Of the cooked turkey and bean mixture, roll, and place seam side down in one of the baking dishes. Repeat until all turkey mixture and tortillas are gone.
 
12. Top both baking dishes full of enchiladas with remaining enchilada sauce, cheese, tomatoes, olives, jalapeños (If using) and half of the cilantro.
 
13. Cover with foil, and bake at 350° on the middle rack for 25 minutes or until sauce at the bottom of each baking dish is boiling.
 
14. Remove foil and cook and additional 5 minutes.
 
15. Garnish with the remaining cilantro, lemon, and hot sauce if desired.
