Warm Teriyaki Salmon Salad

Ingredients - This recipe makes 2 servings
For Salmon:
2 salmon portions
2 tablespoons teriyaki sauce
For Salad:
1 cup cleaned baby spinach
1 cup assorted bell peppers seeded, cored, cut into thin strips
1 red onion, trimmed and thinly sliced
5-6 mandarin orange segments (1 can mandarin orange segments works)
1 green onion or fresh herbs for garnish
sesame seeds
For Dressing:
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1 teaspoon brown sugar
1 teaspoon sesame oil
Blend together to make vinaigrette
 
Instructions 
1. Marinate salmon portions for 30 minutes in teriyaki sauce.
 
2. Cook on medium high heat on a grill for 3 minutes each side.
 
3. Sprinkle with sesame seeds after cooking.
 
4. Season peppers and cook on grill until tender.
 
5. Mix grilled vegetables, spinach and mandarin orange segments and top with salmon portions and garnish.
